Brussel Sprout Salad
A quick, no-cook side for any fall or winter gathering
Ingredients: (*=add to your farmbox!)
*brussel sprouts
pine nuts
*fresh cranberries
olive oil or *sunflower oil
lemon juice
dried or *fresh chives
salt & pepper
parmesan
Pomegranate seeds would be a tasty replacement for roasted cranberries
Instructions:
Roast cranberries in a preheated 400 degree oven for about 20 min (or substitute for dried cranberries)
Wash and dry brussel sprouts, then thinly chop
Drizzle brussels with oil, lemon juice, salt and pepper, and fresh or dried chives
Add pine nuts, fresh grated parmesan and roasted cranberries
Whipped Parsnips
A spin on mashed potatoes
Ingredients: (*=add to your farmbox!)
*parsnips
*butter
*garlic
Milk or cream
*dried thyme
salt (omit if used salted butter)
pepper
Instructions:
Peel and cop parsnips
Peel and slightly smash several garlic cloves
Add garlic cloves and chopped parsnips to pot and cover with water
Cover pot and bring to boil then simmer for about 15 minutes
Strain parsnips and garlic cloves
Add butter, salt & pepper, and milk or cream of choice, and combine with an immersion blender
Top with dried thyme garnish before serving
Maple Roasted Carrots
Ingredients: (*=add to your farmbox!)
*carrots
*maple syrup (or try honey)
*sunflower oil
salt & pepper
Instructions:
Peel and chop carrots
Mix carrots with oil of choice, maple syrup and salt & pepper in a bowl, then place on baking sheet
Bake in a preheated oven at 425 degrees for about 20 minutes
Top with parsley garnish before serving
Bacon & Apple Salad
A quick, minimal cook side that is full of flavor
Ingredients: (*=add to your farmbox!)
*½ lb bacon
*2-3 apples
*½ red onion
1/4 to 1/2 cup pecans
*1/2 cup sunflower oil
*goat cheese
*1/4 cup balsamic vinegar
1 Tbsp dijon mustard
*1 Tbsp honey
salt & pepper
2 garlic cloves, minced
red pepper flakes
*mixed lettuce
Can omit red pepper flakes if sensitive to heat and micro greens would be another great addition to this
Instructions:
Chop bacon, cook and set aside to cool
Chop apples
Thinly slice red onion
Roughly chop pecans
Put salad greens in a large serving bowl and top with bacon, apples, pecans, red onion and goat cheese
Mix together oil, balsamic vinegar, dijon mustard, honey, minced garlic, salt, pepper and red chili flakes
Drizzle dressing over salad and serve
